Tabbouleh Salad: A Colorful and Flavorful Start to our 30-Day Ramadan Challenge at SimplyMilko


Welcome to SimplyMilko, where we're all about making your life simpler and more delicious. As part of our 30-day 2023 Ramadan challenge, we're featuring a variety of recipes from different countries and continents.

Today, we're starting with Egypt and one of our favorite Middle Eastern dishes: Tabbouleh Salad.



Tabbouleh Salad is a salad that's anything but boring. It's packed with fresh herbs, juicy tomatoes, and crisp cucumbers, all mixed together with a tangy lemon and olive oil dressing. It's so delicious, it'll make you forget that it's healthy!

Let's get started with the recipe:


Ingredients:

1 cup bulgur wheat (or white rice)

1 1/2 cups boiling water

1/4 cup lemon juice

1/4 cup olive oil

2 cloves garlic, minced

Salt and pepper to taste

1 cup chopped fresh parsley (spinach)

1/2 cup chopped fresh mint

1 cup chopped tomatoes

1/2 cup chopped cucumber (or bell pepper, carrots, tomatoes)

1/2 cup thinly sliced green onions



Instructions:

In a large bowl, combine the bulgur wheat and boiling water. Cover and let sit for 20-30 minutes, or until the wheat has absorbed all the water and is tender.

In a small bowl, whisk together the lemon juice, olive oil, garlic, salt, and pepper.

You're creating a dressing so tasty, you'll be tempted to drink it straight from the bowl (but please don't do that).

Add the chopped parsley, mint, tomatoes, cucumber (or other vegetables), and green onions to the bowl with the bulgur wheat. This is where it all happens!

Pour the dressing over the salad and toss to combine.

Make sure every piece of vegetable is coated in that delicious dressing.

Chill the tabbouleh in the refrigerator for at least 1 hour before serving. Patience is a virtue, but trust us, it'll be worth the wait.

This Tabbouleh Salad recipe is a great way to add some color and flavor to your meal.

It's perfect as a side dish, or as a light lunch or snack.
